Donna Hay’s Winter Dessert

Is there any better way to conclude a wintry, home-cooked meal than with one of these scrumptious rhubarb apple pies served with steaming, creamy custard? We think not!

apple, rhubarb and cinnamon pan pies

  • 8 large Granny Smith (green) apples, peeled, cored and chopped
  •  4 stalks rhubarb, trimmed and chopped
  •  1 tablespoon lemon juice
  •  ½ cup (110g) caster (superfine) sugar
  • 1 teaspoon ground cinnamon
  •  1 teaspoon vanilla extract
  •  2 tablespoons cornflour (cornstarch)
  •  1 tablespoon water
  •  2 sheets store-bought puff pastry
  •  1 egg, lightly beaten
  •  2 tablespoons granulated sugar
  •  ¼ teaspoon ground cinnamon, extra store-bought vanilla custard, to serve

Preheat oven to 200ºC (400ºF). Place the apple, rhubarb, lemon juice, sugar, cinnamon and vanilla in a bowl and toss to combine. Divide the mixture between 2 x 14cm frying pans with a heatproof handle and cover with aluminium foil. Place over medium heat and cook for 6–8 minutes or until just tender. Remove from heat. Combine the cornflour and water, divide between pans, and stir through the apple mixture. Cut 2 x 20cm rounds from the pastry and make a small cut in the top of the pastry. Place on top of the apple mixture and pinch the edges to seal. Brush the pastry with egg. Combine the granulated sugar and extra cinnamon and sprinkle over the pastry. Bake for 25–30 minutes or until golden and crisp. Serve with custard. Serves 4–6

Neale Whitaker’s Interior Inspiration

Editor-In-Chief of Belle and judge on Channel Nine’s Logie-winning The Block, Neale Whitaker kindly took time out of his hectic schedule to chat to us about his interior inspiration, decorating don’ts and Domayne winter must-haves.

 How would you define the style aesthetic of your home?

I like to think it’s a slightly more glamorous version of shabby chic! It’s a very real home, full of shared memories and favourite things that my partner and I have collected over the years.

 When it comes to decorating, what inspires you?

Travel, art, a sense of heritage and tradition and the amazing Australian climate and light. I also love clever combinations of colour, texture, period and mood.

 What colour palette have you incorporated into your decor?

Our house has a very neutral colour palette throughout, with tones of warm orange, deep red and brilliant green.

 What are your most treasured decorating items?

A vintage, hand-woven Moroccan carpet from the 1970s, and the painting of my partner and me with our two beloved Weimaraners by Sydney artists Gillie and Marc.

What would be your top three don’ts’ when it comes to decorating?

1. Don’t slavishly follow a trend
2. Don’t try to match everything
3. Don’t over-style; remember that less is almost invariably more!

Meltingly Tender Slow-Cooked Lamb Shanks

Hearty winter dining at its best, these warming, melt-in-your-mouth lamb shanks are the perfect comfort food.

Redcurrant, garlic and rosemary lamb shanks

Serves 4

1⁄4 cup plain flour
Sea salt and cracked black pepper
4 Frenched lamb shanks
2 tbsp olive oil
2 red onions, cut into thin wedges
2 garlic cloves, finely chopped
1½ cups beef stock
210g jar redcurrant jelly
1 cup red wine
2 sprigs rosemary
3 bay leaves
Mashed potato, to serve
Steamed greens, to serve

1. Season flour with salt and pepper. Coat lamb shanks with seasoned flour, shake off excess. Heat oil in a non-stick frying pan over a high heat. Cook lamb shanks for 5-7 minutes, or until browned all over. Remove and transfer to a slow-cooker.

2. Add onion and garlic to frying pan and cook for 1 minute. Add stock, jelly and wine and stir until jelly has melted. Pour over lamb shanks in slow-cooker. Add the leaves from 1 sprig of rosemary and bay leaves. Cover and cook in slow cooker on high for 3-4 hours or slow for 6-8 hours, or until meat is falling off the bone.

3. Remove lamb shanks and set aside, covered. Transfer sauce to a saucepan and bring to a simmer. Simmer for 5-7 minutes, or until reduced and thickened. Serve lamb shanks with mashed potatoes and greens, with sauce spooned over and remaining rosemary.

What’s new and exciting in Domayne’s latest junior collection?

What are the latest storage solutions for kids’ rooms?

We have a couple of great new storage items, the first being the ABC chest (pictured above). Each letter of the alphabet is its own drawer providing lots of little compartments for the multitude of things children collect. The chest is finished in recycled timber and is just a cool and very practical piece to have. Regarding the larger items, you can’t go past the Daybed storage base or the new ‘My Place’ Daybed (pictured at top) with great storage options – an easy way tuck it all away out of sight! I am a firm believer that everything should have a place!

Kids grow up so quickly! What are some practical pieces that grow with them?

White… anything white! It’s just such a great base for so many different styles and colours, and it  can be easily changed as they grow. Pick a simple look that won’t date and your kids can change their accessories, bed linen, prints, lights and so on as their personal sense of style evolves.

What are your tips for a cool teen retreat?

Teens will generally tell you what’s cool… what I think is on-trend in a teens room is adding a dark grey or black wall – this might sound morbid but I love the contrast you can get with the furniture. Look at page 13 of our catalogue with the Quad Bunk in white (pictured above) teamed beautifully with the dark feature wall and the sunny pops of yellow.
